  • ½ cup canola oil
  • ½ cup milk
  • ½ cup caster sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 160°C (320°F) for convection or 180°C (355°F) for standard ovens. Grease and line a 9×5 inch loaf tin with baking paper.
  2. In a large bowl, mash the overripe bananas thoroughly. Add canola oil, milk, caster sugar, brown sugar, eggs, and vanilla extract; mix until combined.
  3. Sift flour, baking powder, and salt over the wet ingredients. Gently fold together until just combined; it’s okay if there are a few lumps.
  4. Pour the batter into the prepared loaf tin and bake for about 45-55 minutes or until golden brown. Check doneness with a skewer; it should come out clean.
  5. Allow cooling in the tin for about 10 minutes before transferring to a wire rack to cool completely.
