  • 3 lbs bone-in, skin-on chicken thighs
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/3 cup ketchup
  • 1/4 cup chicken broth
  • 2 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 2 tsp sesame oil
  • 1 tbsp cornstarch
  • 1 tbsp water (for slurry)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Arrange chicken thighs skin-side up in a baking dish.
  3. In a saucepan, combine pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger, garlic, and sesame oil. Bring to a boil and simmer for about 10 minutes.
  4. Mix cornstarch with water in a small bowl and stir into the sauce until thickened.
  5. Pour the sauce over the chicken and bake uncovered for 45–60 minutes until the internal temperature reaches 165°F (74°C). Baste halfway through cooking for extra flavor.
