  • 3 boneless skinless chicken breasts (about 1 ½ pounds)
  • 16 ounces uncooked potato gnocchi
  • ½ cup finely grated Asiago cheese
  • 2 cups chicken broth
  • 5 tablespoons unsalted butter
  • ½ cup half-and-half
  • 2 cups fresh baby spinach
  • Salt and pepper to taste

Instructions

  1. Season the pounded chicken breasts with salt and pepper.
  2. In a non-stick skillet, melt 2 tablespoons of butter over medium heat. Cook the chicken for 8-10 minutes until golden and cooked through; set aside.
  3. In the same skillet, melt the remaining butter, add diced shallots and garlic, cooking until softened. Whisk in flour until lightly golden.
  4. Gradually add chicken broth while whisking, scraping up any browned bits. Simmer until thickened.
  5. Stir in half-and-half and uncooked gnocchi. Cook until gnocchi are tender (5-7 minutes).
  6. Add fresh spinach and Asiago cheese; cook until wilted and melted.
  7. Serve the cooked chicken on top of the gnocchi mixture, garnished with parsley.
