  • 110g almond meal
  • 140g icing sugar (sifted)
  • 90g apple tea
  • 10g egg white powder
  • 100g castor sugar
  • 2 drops lemon juice
  • 100g butter (for filling)
  • 100g icing sugar (for filling)
  • 90g apple butter (for filling)
  • 2 teaspoons ground cinnamon (for filling)

Instructions

  1. Process almond meal and icing sugar in a food processor; sift and set aside.
  2. Whisk cooled apple tea with egg white powder until frothy.
  3. In a mixer, whip the mixture until soft peaks form; gradually add castor sugar until stiff peaks develop.
  4. Gently fold half of the almond mixture into the meringue, followed by the rest until smooth.
  5. Pipe onto greaseproof paper on baking sheets; let dry for 20-30 minutes.
  6. Bake at 150°C (302°F) then reduce to 140°C (284°F) and bake for 12-14 minutes.
  7. Cool before removing from paper.
  8. Make buttercream by whisking together all filling ingredients until creamy; pipe onto macaron shells and assemble.
