  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 150 g granulated sugar
  • 4 egg yolks
  • 600 ml milk (whole, skimmed, lactose-free, or plant-based)
  • 2 tbsp cornstarch
  • 2 tsp vanilla bean paste
  • 1 tsp salt

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Core and slice the apples into thin rounds. In a bowl, mix together sugar and cornstarch, then coat the apple slices evenly.
  3. Arrange the apple slices in a baking dish and bake for 30-40 minutes until tender and caramelized. Let cool.
  4. In a saucepan, whisk together egg yolks, cornstarch, sugar, and salt until smooth; gradually add milk while whisking. Cook over medium heat for about 10 minutes until thickened. Stir in vanilla bean paste.
  5. Layer baked apples followed by custard in a serving dish, repeating layers as needed and finishing with custard on top. Chill for at least one hour before serving.
