  • ¼ cup apple butter or applesauce
  • 2 eggs
  • ¼ teaspoon vanilla
  • 3 tablespoons butter (melted)
  • ¼ cup sugar
  • ½ teaspoon cinnamon
  • ½ cup unsalted butter (room temperature) for buttercream
  • 1 ¼1 ½ cups powdered sugar (sifted)
  • 2 tablespoons plus 2 teaspoons alternative caramel sauce
  • 1 pinch salt
  • 4 ½ ounces cream cheese (room temperature)
  • 3 tablespoons butter (room temperature)
  • 2 tablespoons brown sugar (packed)
  • 2 cups powdered sugar (sifted)
  • ½ teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. Preheat oven to 350°F (175°C). Reduce apple cider in a saucepan until it reaches about 1/4 cup; let cool.
  2. Sift together flour, baking powder, baking soda, salt, and spices in a bowl.
  3. Beat butter and sugars together until combined; add eggs one at a time and mix in cooled cider and apple butter.
  4. Gradually add dry ingredients to wet mixture until just combined.
  5. Scoop dough onto baking sheets, spacing them three inches apart. Bake for 11-13 minutes or until cookies spring back when touched.
  6. Cool on racks, coat with melted butter and cinnamon sugar, then fill with your chosen frosting.
