  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 2/3 cups all-purpose flour
  • 2 teaspoons apple pie spice
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 cup milk
  • 3 tablespoons boiled cider
  • 10 tablespoons unsalted butter, melted (for coating)
  • 1/4 cup boiled cider (for coating)
  • 1 1/4 cups granulated sugar (for coating)
  • 4 1/4 teaspoons apple pie spice (for coating)

Instructions

  1. Preheat the oven to 425°F and grease a mini muffin pan.
  2. In a large bowl, mix sugars, butter, oil, and salt until smooth. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  3. In another bowl, combine flour, apple pie spice, baking powder, and baking soda.
  4. In a liquid measuring cup, whisk together milk and boiled cider.
  5. Gradually add dry ingredients to the butter mixture alternately with the milk mixture until just combined; small lumps are fine.
  6. Fill muffin wells with batter (about one heaping tablespoon each) and bake for 7 to 9 minutes until golden brown.
  7. Allow cooling slightly before dipping in melted butter mixed with boiled cider and coating in spiced sugar.
