  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1¾ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F and prepare a 9” square baking dish by greasing it and lining it with parchment paper.
  2. In a large sauté pan, boil the apple cider until reduced by half (about 5 minutes). Measure to ensure you have ¾ cup, then whisk in cold butter until melted.
  3. In a medium bowl, whisk together eggs, sugars, oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt.
  4. Gradually add the boiled cider mixture to the wet ingredients and mix until combined.
  5. Gently fold in the flour until just mixed; be careful not to overmix.
  6. Pour batter into the prepared dish and bake for 22–25 minutes until golden brown.
  7. Cool on a rack for about 5 minutes before brushing with melted butter and sprinkling with cinnamon sugar.
