Instructions

  1. Preheat your oven to 350°F and prepare an 8 x 5 inch loaf pan by greasing and flouring it or lining it with parchment paper.
  2. In a small bowl, whisk together the brown sugar and ground cinnamon; set aside.
  3. In a large mixing bowl, whisk the eggs with the granulated sugar until well combined.
  4. Stir in the melted butter and vanilla extract until smooth.
  5. Add flour, baking powder, baking soda, and salt; mix until just combined to avoid overmixing.
  6. Gently fold in chopped apples until evenly distributed throughout the batter.
