  • 1/3 cup granulated sugar
  • 1 tablespoon fresh lemon zest
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup cold salted butter
  • 3/4 cup + 2 tablespoons buttermilk
  • 1/4 cup fresh lemon juice
  • 1 to 1 1/4 cups fresh blueberries
  • 2 tablespoons melted butter
  • Coarse or turbinado sugar, for sprinkling
  • 1 1/4 cups powdered sugar

Instructions

  1. Preheat your oven to 400 degrees F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together flour, sugar, lemon zest, baking powder, baking soda, and salt.
  3. Grate cold butter into the dry mixture and toss until coated.
  4. Gently fold in blueberries.
  5. Add buttermilk and lemon juice; mix until just combined.
  6. Turn dough onto a floured surface and shape it into a rectangle (15×3 inches).
  7. Cut into triangular wedges and place on the baking sheet with space between them.
  8. Brush tops with melted butter and sprinkle sugar on top.
  9. Bake for about 15 minutes until golden at the edges.
  10. Cool slightly before drizzling with glaze made from powdered sugar and lemon juice.
