  • 1 Tbsp Olive Oil
  • 1 Celery Stalk, Finely Chopped
  • 1 Small Carrot, Peeled & Finely Chopped
  • 1 Medium Onion, Finely Chopped
  • 2 Garlic Cloves, Crushed
  • 400 G Chickpeas, Rinsed And Drained
  • 400 G Chopped Tomatoes
  • ½ Tsp. Ground Cumin
  • ½ Tsp. Ground Cinnamon
  • ½ Tsp. Ground Paprika
  • ½ Tsp. Cayenne Pepper
  • 850 Ml Vegetable Stock

Instructions

  1. Prepare all ingredients by chopping the celery, carrot, onion, and garlic.
  2. In a soup maker or saucepan, heat olive oil over medium heat. Sauté onions, garlic, celery, and carrot for about 5 minutes until softened.
  3. Add chickpeas, chopped tomatoes, cumin, cinnamon, paprika, cayenne pepper, and vegetable stock to the pot. Stir to combine.
  4. If desired, blend the soup for a smoother texture; otherwise, leave it chunky.
  5. Cook according to your soup maker's instructions or simmer on the stovetop until heated thoroughly.
