  • 2 cups cooked jasmine rice (day-old or cold)
  • 1 green onion (finely chopped)
  • 2.5 tbsp soy sauce
  • 1/2 tbsp sesame oil
  • 4 large eggs (beaten)
  • 2 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a large pan or wok over medium-high heat.
  2. Pour in the beaten eggs and stir-fry until they start to set but remain slightly moist.
  3. Immediately add the cooked rice, breaking apart any clumps as you stir.
  4. Push the mixture to one side and add green onions to the empty space; mix well.
  5. Drizzle soy sauce and sesame oil around the edges of the pan, tossing everything until evenly coated.
