- 2 cups cooked jasmine rice (day-old or cold)
- 1 green onion (finely chopped)
- 2.5 tbsp soy sauce
- 1/2 tbsp sesame oil
- 4 large eggs (beaten)
- 2 tbsp vegetable oil
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Pour in the beaten eggs and stir-fry until they start to set but remain slightly moist.
- Immediately add the cooked rice, breaking apart any clumps as you stir.
- Push the mixture to one side and add green onions to the empty space; mix well.
- Drizzle soy sauce and sesame oil around the edges of the pan, tossing everything until evenly coated.
